Red Velvet Cookies

(recipe adapted from how sweet it is)

Makes about 18-24 cookies

Ingredients

  • ½ cup butter
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup unsweetened cocoa powder
  • 1 teaspoon red food coloring
  • ½ cup white chocolate chips

Directions

  1. Preheat oven to 375°F.
  2. Cream butter and sugars together.
  3. Add eggs and vanilla and mix until smooth.
  4. Mix in the red food coloring.
  5. Stir/sift in the cocoa, flour, baking soda, and salt. Mix until combined.
  6. Fold in the chocolate chips.
  7. Scoop out about 1 tbsp of dough and set on baking sheet.
    *Note: Leave about 1-2 inches between scoops on the sheet; the cookies will expand.
  8. Bake for 8-10 minutes.
  9. Transfer to a cooling rack to cool.

OPTIONAL: Top with a cream cheese frosting

Cream cheese Frosting

  • ½ cup sugar
  • 8oz. cream cheese (at room temp for easy mixing)
  • ½ tsp vanilla extract

Directions

  1. Mix all ingredients together until smooth.
  2. Store in refrigerator until ready to use.
